Huntington Beach—Alicia Cox, renowned as the “queen of concessions” in Orange County, has continued her transformative impact on Huntington Beach’s coastline with the recent launch of two new beachfront eateries: SeaSalt Honky Tonk and PCH Tacos. These establishments aim to create vibrant community hubs, emphasizing inclusivity and cultural celebration.

SeaSalt Honky Tonk offers a unique experience that draws from Orange County’s rich culture and the influences of modern country music. The eatery features live music, line dancing, and a menu centered around barbecue dishes, thanks to a partnership with Daniel and Brenda Castillo from Heritage Barbecue. The venue is adorned with artwork and quotes from popular country artists including Morgan Wallen, Kenny Chesney, and John Pardi, creating an inviting atmosphere for beachgoers. SeaSalt Honky Tonk is notable for potentially being the only honky tonk located directly on a beach.

Cox operates a total of seven locations along the coastline, with an eighth, named California Fork and Spoon, currently in development at Huntington State Beach. Each weekend, Cox ensures that she oversees her venues, showcasing her dedicated approach to management. Sundays at SeaSalt Honky Tonk celebrate the Redneck Rodeo event, which draws a lively crowd.

In addition to her country-themed venue, PCH Tacos caters specifically to the significant Latino and Mexican population within Southern California. The eatery exudes a “Cabo vibe,” highlighted by its Calaveras-themed decor and a menu that reflects traditional Mexican cuisine. A collaboration with Mega 96.3 brings DJ entertainment to the restaurant, while bright, festive canopies enhance the lively outdoors experience.

Cox is committed to inclusivity within her establishments, organizing pride parties in collaboration with local LGBTQ organizations. Her venues aim to unite individuals from all walks of life, fostering an environment of joy and togetherness. Furthermore, she holds contracts with California State Parks for both of her beachfront locations, working towards redefining beach recreation for visitors.

The entrepreneurial spirit of Alicia Cox extends beyond her eateries. She has also authored a cookbook titled California – Fork & Spoon Vol. 1: A Culinary Story, released in December. This book, which documents her diverse culinary journey and includes a variety of recipes, has seen sales of approximately 500 copies through her self-promotion initiatives.

In her personal life, Cox actively engages her daughter in advocacy and charitable efforts. Through partnerships with Families Forward, they aim to provide support to struggling families in the community, showcasing their commitment to social responsibility.

As the summer months transition into autumn, Cox’s concessions remain open, continuing to attract visitors eager for enjoyment and connection along Huntington Beach’s shores. The new establishments, with their themes of culture and camaraderie, reflect Cox’s vision of creating spaces where community thrives, ensuring her influence on the coastline is felt throughout all seasons.
